Rosemary Lemonade

Tart lemons and savory rosemary. This drink is slightly sweet with an herby bite.



  • 12 lemons
  • 3 cups water
  • 1 1/2 cups sugar
  • 2 sprigs fresh rosemary
  • Sparkling water, tonic or seltzer for serving


Using a sharp knife, remove zest from the lemons in long, thin strips. Set the lemons aside. In a saucepan over medium high heat, bring water and sugar to a boil. Once the mixture reaches a boil and all of the sugar has dissolved, add the lemon zest. Remove from heat. Let set for fifteen minutes and add the rosemary sprigs. Let the mixture sit for another fifteen minutes (thirty minutes total.)

Meanwhile, juice the lemons and strain. Be sure you remove any seeds or pulp. 

Once the sugar water mixture has cooled, strain out the lemon zest and rosemary springs. Combine with the fresh lemon juice. 

When you are ready to serve, fill a glass halfway full with ice. Pour in about 1/2 cup lemonade and fill the rest of the glass with your choice of sparkling water, tonic or seltzer.
